1/2 cup of almonds
1 tbsp ground flaxseeds
1 cup of unsweetened shredded coconut
1/4 cup of maple syrup
2 tbsp cashew butter
1/2 cup of pumpkin puree (select organic pumpkin)
1 tsp vanilla extract
1 tsp cinnamon
Preheat oven to 350F. Place baking sheet on a cookie tray.
Place almond and flaxseeds in a food processor and process until almonds are finely ground. Add rest of the ingredients and blend for 20 seconds longer until ingredients are combined.
Use a spoon to scoop 1 tbsp of dough onto the baking sheet. Continue with the rest and bake in the oven for 10 minutes. Flip the cookies after 5 minutes. Remove cookies from oven and eat warm or let them cool down. Happy Halloween!
