Goji-Coconut on the Go Snack
1.5 cups of unsalted raw cashews
4 tbsp flaxseeds
2 cups unsweetened shredded coconut
1/4 cup raw almond butter
1 tbsp coconut oil
1/4 cup dried goji berries
Preheat oven to 325F and line a baking sheet on a cooky tray. Grind cashews and flaxseeds in a food processor until finely ground. Add shredded coconut and pulse a few times until mixed. Then add almond butter, coconut oil and goji berries until well combined. Use your hands to form a small ball of goji-coconut mixture and place on cookie tray. Continue with the rest. Press with the back of a spoon on to the balls to make them in little round cookies. Place in the oven for 15 minutes and remove. Let Goji-Coconut cookies cool down and pack it to enjoy on the go. Makes about 15 cookies.
